With the help of modern aroma analysis, it is possible to break down the aroma of a known product, recreate it from its individual aroma compounds, and thus create a new product with an identical or very similar aroma.
This method is particularly useful in the production of flavors to replicate the aroma of the natural source, such as an aromatic fruit, as closely as possible. However, even adding individual aroma compounds to a specific product is often sufficient to adapt the aroma spectrum to the model product.
The valuable aroma compounds are first identified by means of gas chromatography-olfactometry – ideally using aroma extract dilution analysis. To determine the exact concentrations of the aroma compounds present, they are then quantified using stable isotope-labelled standards via GC-mass spectrometry. If desired, an aroma recombinate can also be created. For this purpose, the aroma compounds are mixed in a suitable matrix at the appropriate concentrations. The aroma recombinate can then be sensorially evaluated in comparison to the original and, if necessary, adjusted to achieve optimal results.
